½ lb shredded mozzarella cheese

½ lb string cheese

1 bag of coleslaw

2 cups of Maseca instant corn flour (sold at Fry’s)

1 can of diced tomatoes (14.5 oz)

2 garlic cloves

½ white onion

1 cucumber (optional)

Chef’s Notes

This dish is reminiscent of a thick griddle cake or flatbread

Pupusas are the national dish of El Salvador, and every second Sunday of November is celebrated as National Pupusas Day

Pupusas are traditionally served with curtido (included in this recipe), which is a pickled cabbage relish

Pupusas are usually eaten by hand, which is thought to originate from the corn within tortillas being seen as a ‘divine grain’ not to be cut with a knife, but instead by one’s fingers

There are also Salvadoran pupusas made with loroco, which are the edible green buds of a flowering vine that adds unique flavor.
