About The Event
Jollof Rice is one of Ghana's treasured recipes. It's everyone's favorite!
Ingredients list for Chicken/Beef Jollof Rice
- Jasmine rice
- Vegetable Oil (or your preferred oil)
- Tomato paste
- Ground Cayenne pepper
- Onion
- Spices (salt, pepper, rosemary, curry, plus any spice of your choice)
- Ginger (Ground or powdered)
- Garlic (Ground or powdered)
- Carrots
- Green bell pepper (or your desired bell peppers)
- Chicken/ beef (whichever you prefer)
Recipe
- Cut up meat to designed size
- In a pan, add meat
- Spice meat with ginger, garlic, rosemary, salt, black pepper, chopped onions
- Let it simmer for 10 to 15 minutes (or till tender)
- In a frying pan, add enough oil to shallow fry meat
- Once meat is cooked, remove and then add chopped onion to the remaining oil
- Add tomato paste and cook for 5 minutes
- Add cayenne pepper and stock from meat
- Cook for 5 minutes and add 2 cups rice
- Stir and add salt
- Add 2 cups of water and cook on low heat
- Stir after intermittently so the rice mixes up well with stew and until there is no water
- Taste for rice and sprinkle water if needed
- Cover with paper napkin for even cooking
- Add diced carrots and bell peppers wen rice is fully cooked and stir together
- Let it simmer for a 3 minutes and serve.
- NB: rice cooks evenly better on low heat
